Spring Canyon Adventure 2007 – Menu Notes

Synopsis: Detailed menu and notes on its successes and failures.

General thoughts:

  • A 2-quart pot is too small for three people.
  • A lightweight coffee pot is great for boiling water and scooping to fill water carrier, but its screen filter on the spout gets in the way.
  • We had planned to eat dinner out before arriving at the trailhead, but we were at the trailhead by the time dinner rolled around and had to rely on leftover sandwiches, Dinty Moore stew purchased at a convenience store, etc.

Quantities given are pre-cooked totals (i.e., not per-person).

Dinners

Day 3
  • 2 boxes Annie’s macaroni and cheese
  • A little meager

“Reid’s Famous Enchiladas”

  • 1 c dry refried beans
  • ~1 c brown instant rice
  • 1 lb cheese
  • 2 packets dry taco sauce mix
  • A little dried ground beef
  • Fabulously yummy as always
  • Quantity good
  • Less cheese would have been fine
  • Overflowed pot
Day 5
  • 1 box Hamburger Helper
  • Dried ground beef
  • One 2-serving freeze-dried dinner (sweet-n-sour chicken)
  • Hamburger Helper was pretty meager

  • 2 pk garlic-herb sauce
